Apple Marmalade

ingredients

  • 1 orange
  • 1 lemon
  • 3/4 cup water
  • 5 cups sugar
  • 1 1/4 cup water
  • 8 cups peeled, cored, thinly sliced apple

    Quarter orange and lemon, loosen pulp from rind. Cut rind into paper thin strips about 1" long. bring water to boil in small saucepan over medium heat. Add rind and reduce heat. Cover pan and simmer until rind is tender, about 15 minutes. Do not drain.

    Slice citrus fruit pulp very thin, discarding seeds. Stir sugar and the 1 1/4 cups water in large saucepan over medium heat until sugar is dissolved. Add apples and citrus pulp. bring to boil over high heat and boil rapidly stirring constantly until thick, about 20 minutes. Add rind and bring to second boil. remove from heat. Skim if necessary. Ladle into hot sterilized jars and seal.
