Zucchini Chocolate Cake
ingredients
- 2 3/4 cups GF flour
- 1/4 cup cocoa
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. vanilla
- 1/2 cup buttermilk (or 1/2 cup milk with 1/2 tsp. vinegar)
- 1/2 pkg. or 1 cup chocolate chips
- 1/2 cup chopped pecans
- 1/2 cup margarine
- 1/2 cup oil (can use 1/2 cup applesauce instead)
- 1 1/2 cup sugar
- 2 eggs
- 2 cups grated, unpared zucchini
directions
Mix flour, cocoa, soda, and salt. Cream butter, oil (or applesauce) and sugar in a large bowl until light and fluffy. Beat in eggs 1 at a time. Blend in vanilla. Add dry ingredients alternately with buttermilk to creamed mixture, beating well. Stir in zucchini. Pour into greased 9x13 pan. Sprinkle chips and nuts over the top. Bake 50-55 minutes at 325.
