WALDORF SALAD
Fruit salad in a in a creamy sweet and tangy sauce.
ingredients
- Sauce:
- 6 Tablespoons Vinegar
- 6 Tablespoons Sugar
- 3 Eggs well beaten
- 3 Tablespoons butter
- 1/2 Teaspoon salt (optional)
- Fruits:
- 1 Large can of fruit cocktail, drained or 4 cups of a mixture of fresh fruits (pineapple and strawberries are my favorites)
- 2-3 bananas sliced
- 1 or 2 apples - diced
- 1-2 stalks celery thinly sliced
- 1/2 cup pecans or walnuts finely chopped
- 1 cup miniture marshmellows

Cook over low heat or in double boiler, butter, sugar, vinegar, and salt. Add eggs and mix thoroughly and quickly. Stir constantly until sauce is thickened. Cool.

Combine sauce with remaining ingredients and refrigerate. Serve over a leaf of lettuce or in a compote dish. Should be served same day as sauce will become very thin after a day or two in the refrigerator.
