HEALTHY TURKEY MEATLOAF
ingredients
- 1 1/2 C chopped onion
- 1 T minced garlic
- 1 t olive oil
- 1 medium carrot, cut into 1/8" dice
- 3/4 lb cremini mushrooms, very finely chopped in food processor
- 1 t salt
- 1/2 t black pepper
- 1 1/2 t Worcestershire sauce
- 1/3 C finely chopped parsley
- 1/4 C + 1 T ketchup
- 1 C fine fresh bread crumbs
- 1/3 C 1% milk
- 1 whole large egg, lightly beaten
- 1 large egg white, lightly beaten
- 1 1/4 lb ground turkey

Preheat oven to 400.

Cook onion and garlic in 12” nonstick pan about 2 minutes, until onion is softened. Add carrot and cook, until softened, about 3 minutes. Add mushrooms, 1/2 t salt, 1/4 t pepper, and cook, stirring occasionally, until liquid mushrooms give off is evaporated and they are very tender (10-15 minutes). Stir in Worcestershire, parsley, and 3 T ketchup, then transfer veggies to large bowl and cool.

Stir together bread crumbs and milk in small bowl, let stand 5 minutes. Stir in egg and egg white, then add to veggies. Add turkey and remaining 1/2 t salt and 1/4 t pepper to veggie mixture, mix well with hands.

Form into 9” x 5” oval loaf in slightly oiled 13” x 9” x 2” metal baking pan and brush with 2T ketchup. Bake until thermoter inserted into middle reads 170 – about 50-55 minutes. Let stand 5 minutes before serving.
