Russian Tea Cakes
These buttery cookie balls go by many names (Mexican Wedding Cakes). They always contain finely chopped nuts and are twice rolled in powdered sugar.
ingredients
- 1 C. butter or margarine, softened
- 1/2 C. powdered sugar
- 1 tsp vanilla
- 2 1/4 C. all purpose flour
- 3/4 C finely chopped nuts (pecans)
- 1/4 tsp salt
- Powdered sugar

Heat oven to 400 degrees.

Cream butter in a large mixing bowl; gradually stir in 1/2 cup powdered sugar, beating until light and fluffy. Stir in vanilla.

Combine flour, pecans and salt; gradually add to creamed mixture, blending well. Chill until firm.

Shape dough into 1-inch balls. Place two inches apart on an greased cookie sheets.

Bake at 400 degrees for 10 to 14 minutes or until set and edges are lightly browned. Remove from cookie sheet. Cool slightly on wire rack.

Roll warm cookies in powdered sugar; cool on wire rack.

Roll in powdered sugar again.
