Rice Pilaf
Easy side dish, good with grilled meat or fish.
ingredients
- 1 cup short or medium grained rice
- 1/4 cup sliced mushrooms
- 1/4 cup diced onion
- 1/4 cup frozen peas
- 1/4 cup diced red or yellow bell pepper
- 1 t dried thyme
- 1 1/2 t salt
- 1 t pepper
- 2 T olive oil
- 2 cups chicken or vegetable stock
- 1 T toasted almonds to garnish (optional)

In a large frying pan on medium high heat, add the oil and then add in the onion and bell pepper. Saute for 5 minutes. Add the rice and saute for 2 to 3 more minutes or until the rice starts getting translucent. Add the remaining ingredients except for the almonds and stir. Bring to a boil, cover, turn the heat to low and cook until liquid is absorbed, about 15 to 20 minutes.

Turn out into a large serving bowl, fluff with a fork and garnish with almonds.
notes
You can always switch up the vegetables to what's in season.
