Sweet Potato Hash
We love sweet potatoes so it wasn’t a stretch to use them to up the yum factor on this traditional comfort food.
ingredients
- 4 strips applewood smoked bacon, cooked and cut into 1/4 inch dice
- 1/2 medium Vidalia onion, cut into half moons
- 2 tablespoons kosher salt for the boiling water
- 2 jumbo or 4 small sweet potatoes, peeled and cut into 1/4 inch dice
- 3 tablespoons cane syrup or dark maple
- 2 tablespoons unsalted butter cut into several pieces
- Sea salt
- freshly ground black pepper
- rosemary - fresh or dried

Brown the onions in the same pan you used to cook the bacon. You want to cook the onions until they start to caramelize - about 10 minutes.

Meanwhile, bring the water to a boil; add the kosher salt. Add the potatoes and cook for 2-3 minutes (will have a slight crunch). Drain in a colander then spread on paper towels and pat dry.

Add potatoes to the bacon-onion mixture, add syrup and butter. Stir to combine and cook for 1-2 minutes until potatoes are tender.

Add salt, pepper and rosemary to taste.
