Potica
My mom, Sarah Kuffel, baked this for all holidays and gave them as gifts. On Christmas morning , we would have a slice with coffee. Everybody loves this treat!
ingredients
- 1. c. oleo (margarine) or butter
- 1/2 c. milk
- 2 packages dry yeast
- 1/4 c. lukewarm water
- 2 1/2 c. flour
- 1/4 tsp. salt
- 2 T. sugar
- 3 egg yolks (Save the shites for filling.)
- FILLING
- 1 heaping c. ground nuts (Ground walnuts and pecans work well.)
- 3/4/c. chopped dates
- 3 T. sugar
- 1/4 c. milk
- 3 egg whites stiffly beaten

Mix to paste over heat, dates, sugar, cinnamon and milk.

Add nuts. Cool. Beat egg whites until stiff, gradually adding the 1 c. of sugar. Fold in nut mixture. Roll out 1/2 dough into 20" square on well floured cloth or board. Spread on 1/2 of filling. Roll as for jelly roll. Put in greased angel food cake pan. Roll other half the same way. You will have two rolls. Place first roll in pan. Place the other on top of the other in pan with the end seams opposite of each other. The two rolls will become one during baking. Bake 1 hour at 350 degrees. Invert onto cooling rack after a few minutes. May be served with butter when cool.
