Jamaican Beef Patties

- Dough:
- 3 cups flour
- 1/2 tsp salt
- 2 TB curry powder (Jamaican curry is best)
- 1 cup cold butter
- 3/4 cup iced water
- 1 TB vinegar
- 2 egg yolks
- Egg wash (1 egg beaten with 1/4 cup water)
- Filling:
- 2 TB peanut oil
- 1 medium onion, chopped
- 4 green onions, sliced
- 1 TB fresh thyme
- 1 TB spicy jerk seasoning
- 1 lb ground beef
- 1 tsp salt
- Water
- 1 cup bread crumbs
- Black pepper

To make dough: Combine flour, salt, and curry powder in a food processor and pulse. Add the butter and process until the mixture looks like fine crumbs. In a bowl combine the water, vinegar and egg yolks. Add wet mixture to processor bowl and pulse until a ball forms. Cover the dough in plastic wrap and refrigerate for 1/2 hour.

To make filling: Heat oil in a saucepan over medium heat. Add onions, scallions, thyme, and jerk seasoning. When onion begins to soften, add ground beef, salt and enough water to barely cover the meat. Simmer over low heat for 20 minutes. Add bread crumbs and adjust with salt and pepper. Allow time to cool.

Preheat oven to 375°. Roll the dough out to 1/8 inch thick. Cut the dough into 6-inch circles (or 3-inch circles for cocktail size). Place 2 TB of the meat filling on one side of each dough circle. Brush the edges of the dough with egg wash. Fold the dough over the filling to make a half moon shape and press to seal. Place the patties on a parchment lined cookie sheet and bake for 25-35 minutes.
