Broccoli Rice Casserole
ingredients
- 6 servings of any long grain wild rice
- 1 lb. of broccoli, blanched
- 1 can mushroom or celery soup
- 1 1/2 cups grated cheese
- 1 cup celery, chopped
- 1/2 to 1 cup diced onions

Cook rice as per instructions.

Mix cooked rice, soup, celery and onion together.

Make a layer of rice in large casserole dish. Top with broccoli, then cheese. Make another layer of rice, broccoli and cheese.

Bake for 1 hour at 350°.
notes
You can make the rice ahead of time. To blanch broccoli, drop into boiling water for 60 seconds, then plunge into ice cold water to cool. Keep adding cold water to completely cool broccoli fast.
