Great spicy soup with lots of meat and veggies.

ingredients

  • 1 lb. Ground Beef
  • 3 Hot Sausages
  • 1 med. Onion, finely chopped
  • 2 quarts (8 cups) Water
  • 1 can (28oz) diced tomatoes, undrained
  • 4 cups Cubed Potatoes, peeled/unpeeled
  • 1 can (16oz) Pork & Beans
  • 1 can (12oz) Tomato Soup
  • 1 can (4oz) Mushrooms, undrained
  • 1 cup sliced Carrots
  • 1 cup Green Pepper, chopped
  • 1 cup frozen Peas
  • 3 Celery ribs w/ leaves, finely chopped
  • 3 Chicken bouillon cubes
  • 2 Tbsp. dried Parsley flakes
  • 1 Tbsp. each Cajun, Chili Powder, Creole Seasoning & Crushed Red Pepper Flakes
  • 1 tsp. Black Pepper
  • 1 Bay Leaf

directions

In a soup kettle or dutch oven, cook beef and onion over medium heat until cooked through; drain. Add remaining ingredients; bring to a boil, reduce heat & simmer uncovered for 25 minutes or until veggies are tender. Discard bay leaf before serving.

Great served as is or over white rice.
