Pat's Spicy Soup
Great spicy soup with lots of meat and veggies.
ingredients
- 1 lb. Ground Beef
- 3 Hot Sausages
- 1 med. Onion, finely chopped
- 2 quarts (8 cups) Water
- 1 can (28oz) diced tomatoes, undrained
- 4 cups Cubed Potatoes, peeled/unpeeled
- 1 can (16oz) Pork & Beans
- 1 can (12oz) Tomato Soup
- 1 can (4oz) Mushrooms, undrained
- 1 cup sliced Carrots
- 1 cup Green Pepper, chopped
- 1 cup frozen Peas
- 3 Celery ribs w/ leaves, finely chopped
- 3 Chicken bouillon cubes
- 2 Tbsp. dried Parsley flakes
- 1 Tbsp. each Cajun, Chili Powder, Creole Seasoning & Crushed Red Pepper Flakes
- 1 tsp. Black Pepper
- 1 Bay Leaf
directions
In a soup kettle or dutch oven, cook beef and onion over medium heat until cooked through; drain. Add remaining ingredients; bring to a boil, reduce heat & simmer uncovered for 25 minutes or until veggies are tender. Discard bay leaf before serving.
notes
Great served as is or over white rice.
