Cheese and Salad Pizza
ingredients
- 1 tbsp. olive oil
- 1 lb. fresh or frozen (thawed) pizza dough
- 1 cup part-skim ricotta cheese
- 1/2 cup shredded part-skim mozzarella cheese
- 1/4 cup freshly grated Pecorino Romano cheese
- Salt
- Pepper
- 1 pint cherry or grape tomatoes, each cut in half
- 1/4 cup (loosely packed) fresh basil leaves, sliced

Preheat oven to 450 degrees F. Grease 15 1/2-inch by 10 1/2-inch jelly-roll pan with 1 tablespoon olive oil. With fingers, pat dough onto bottom and up sides of pan.

Spread ricotta on dough; sprinkle with mozzarella, Romano, and 1/4 teaspoon each salt and freshly ground black pepper. Place pan on rack in lower third of oven. Bake pizza 20 minutes or until hot and bubbly and crust is browned. Top with tomatoes and basil to serve.
