Healthy Pumpkin Custard
This tastes almost as good as pumpkin pie, with only 100 calories per serving.
ingredients
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 3 egg whites, or 1/2 cup egg substitute
- 1 can pumpkin
- 1 6 oz can evaporated skim milk

Preheat oven to 425 degrees. Combine sugar, salt, cloves, cinnamon, ginger and egg whites in a medium bowl. Stir in pumpkin and evaporated milk, and mix well.

Coat a casserole dish (or 8 ramekins) with spray oil. Pour in pumpkin mixture. Bake 15 minutes.

Reduce oven temperature to 350 degrees, and bake 40-50 minutes. Cool and serve.
