Adam's Bean Salad
ingredients
- 1/3 cup olive oil
- 1/4 cup fresh lime juice (More lime is better)
- 2 tblsp. chili powder, or to taste
- 3 tsp. ground cumin
- 1/2 tsp. salt
- 2 cloves garlic, crushed
- 1 1/2 cups whole kernel corn
- 1 15 oz. can black beans, drained and rinsed
- 1 15 oz. can chick peas, drained and rinsed
- 1/2 cup diced red bell pepper
- 3/4 cup fresh cilantro leaves

In a large bowl combine oil, lime juice, chili powder, cumin, salt and garlic.

Stir in corn, beans, red pepper and cilantro leaves.

Serve chilled at room temperature.
notes
This dish is also delicious with pasta. You can substitute different types of beans if preferred. This recipe is best when seasoned to taste with lots of lime and cilantro.
