Chicken Mole
ingredients
- 1 tsp olive oil
- 1 cup onion, thinly sliced
- 1 tsp ground cumin
- 1 tsp groun coriander
- 1/2 tsp ground cinnamon
- 2 garlic cloves, thinly sliced
- 3 cups chicken broth
- 1 1/3 cups chopped tomatoes
- 1/4 cup golden raisins
- 3 Tbsp sliced almonds, toasted
- 3 orange rind strips
- 3/4 lb chicken breast halves
- 1/2 oz unsweetened chocolate
- 1/4 tsp salt
- 1/4 tsp black pepper

Heat oil in large Dutch oven over medium high heat. Add onion, cook 5 minutes

Combine cumin, coriander, cinnamon in small bowl. Sprinkle over onion, cook 1 minute. Add garlic, cook 2 minutes. Add broth, tomatoes, raisins, almonds, rind and bring to a boil. Add chicken, cover, reduce heat, simmer 10 minutes. Remove the chicken, shred, set aside.

Add chocolate to the pan mixture. Let stand until chocolate melts. Puree until smooth. Cook over medium heat 20 minutes until reduced to 3 1/2 cups. Add shredded chicken, salt & pepper. Serve with black beans and rice.
