Harvest Vegetable Soup

  • 2 - 13 oz. cans chicken broth (3½ cups)

  • ⅓ C ketchup

  • 1 tsp. Italian salad dressing mix (like Good Seasons)

  • 3 whole fresh tomatoes, washed, cored, quartered (peeled and seeded if desired)

  • 3 fresh carrots, peeled, cut into bite-sized pieces

  • 3 raw potatoes, peeled, cut into bite-sized pieces

  • 2 C fresh broccoli, cleaned and chopped (can use frozen)

  • ¼ C onions, peeled, chopped

  • 2 Tbsp. dried celery flakes

  • 3 oz. precooked lean ham, cut into bite-size pieces (optional)

  • In large pot add broth, ketchup, seasonings and vegetables (also ham if using). Bring to boil in covered pot. Reduce heat, simmer covered about 20-30 minutes, or until vegetables are done. Serve with French bread.

P.S. I usually end up adding a little more water, like a cup or two, to make more soup. If so, I add a chicken bouillon or two and a little more catsup, and maybe a bit more Italian seasoning. I guess it depends on how many vegetables you add.
