Baked duck breast with cauliflower and carrot coup
Tasty meal with loads of veggies
ingredients
- 2 duck breasts, with skin on
- 1 cauliflower, cut into florets
- 2 carrots, chopped
- 1 onion, diced
- 2 cloves of garlic, chopped
- 1 cup chicken broth
- 1 tbs rosemary
- parmesean
- Salt and pepper to taste

Cut into chicken breast, from top to bottom of breast, making sure not to sever into two parts. Stuff with rosemary and parmesean. Push two sides together.

Heat frying pan and place duck in skin down. Cook until skin is turning brown and crispy. Place in baking dish, cover in tinfoil and bake for 45 minutes at 250 degrees c.

Prepare cauliflower with carrot, onion and garlic the same as Creamy Cauliflower (in the Everything Else section). Instead of using yogurt, replace with chicken broth. When done blending, plate vegetables.

When duck is finished cooking, slice into pieces and place on top of vegetables.
