Brooks Christmas Morning Sausage Casserole

A Brooks family Christmas Tradition
ingredients
- 4 (4 oz) canned chopped green chilies
- 6 corn tortillas, cut into 1 inch strips
- 1 lb mild Italian sausage, cook & drained
- 2 c. shredded Monterrey Jack Cheese
- 1/2 c. milk
- 1/2 t. salt
- 1/2 t onion salt
- 1/2 t pepper
- 8 large eggs
- 1/2 t garlic salt
- 1/s t ground cumin
- 2 large ripe tomatoes, sliced

Day Before:

Grease 13 x 9 pan. Layer 1/2 the chilies, tortillas, sausage and cheese. Repeat with other half.

Whisk together milk, eggs, and seasonings. Pour over casserole. Arrange tomatoes on too. Sprinkle with paprika.

Refrigerate overnight, covered with Saran Wrap.

Bake 45-55 minutes at 350 degrees or until set in center and brown around edges. Serve, if desired, with sour cream and salsa.
