Brunch on the Bayou

- 4 oz Italian sausage, casings removed
- 1/2 loaf day old French bread, broken into small pieces
- 3 T butter, melted
- 16 oz shredded Monterey Jack cheese
- 1 1/2 cups milk
- 10 eggs
- 1/3 cup white wine
- 3 green onions, chopped
- 2 teaspoons Dijon mustard
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 cup sour cream
- 1/2 cup Parmesan cheese
