Chunky Chicken Vegetable Soup

ingredients

  • 1/2 lb boneless, skinless chicken breast, cut into 1/2" cubes
  • 1 tsp EVOO
  • 1 (14.5oz) chicken broth
  • 1 1/2 C water
  • 2 C assorted cut-up vegetables (carrots, broccoli florets & chopped red pepper)
  • 1 envelope Good Seasons Italian Salad Dressing mix
  • 1/2 C instant rice, uncooked
  • 2 Tbsp fresh parsley

    Heat EVOO in large saucepan and saute chicken until cooked through.

  • 2

    Add broth, water, veggies and salad dressing mix. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes.

    Stir in rice and parsley; cover. Remove from heat. Let stand 5 minutes.
