Chunky Chicken Vegetable Soup
ingredients
- 1/2 lb boneless, skinless chicken breast, cut into 1/2" cubes
- 1 tsp EVOO
- 1 (14.5oz) chicken broth
- 1 1/2 C water
- 2 C assorted cut-up vegetables (carrots, broccoli florets & chopped red pepper)
- 1 envelope Good Seasons Italian Salad Dressing mix
- 1/2 C instant rice, uncooked
- 2 Tbsp fresh parsley

Heat EVOO in large saucepan and saute chicken until cooked through.

Add broth, water, veggies and salad dressing mix. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes.

Stir in rice and parsley; cover. Remove from heat. Let stand 5 minutes.
