To keep the cookies soft, put a piece of soft bread in the storage container.

ingredients

  • 2 cups sugar, plus more for rolling
  • 1 1/2 cups (3 sticks) unsalted butter
  • 1/2 cup light molasses
  • 2 large eggs
  • 4 1/2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

    In a large bowl using an electric mixer, combine the sugar, butter, molasses and eggs.

    In a separate bowl, sift together the flour, baking soda, cinnamon,ginger, cloves, nutmeg and salt. Gradually add the flour mixture to the sugar mixture and mix until thoroughly incorporated. Cover the bowl with plastic wrap and refrigerate for 1 hour.

    Preheat the oven to 350°.

    Shape the dough into 1-inch balls, roll them in sugar, and place on ungreased baking sheets about 1 inch apart. Bake for about 10 minutes, until just firm in the center. Remove to wire racks to cool.
