My favorite post-workout breakfast. High in protein and low on carbs!

ingredients

  • 1 whole wheat tortilla (burrito size)
  • 3 eggs
  • 2 strips of bacon
  • 2 tablespoons salsa
  • 1/4 cup of shredded cheddar cheese
  • Salt to taste

    Cook the bacon in a frying pan until the borders start becoming dark, then flip. While it is cooking, scramble the three eggs in a pan with some grease (Pam works fine) and add the salt right away. Cook the eggs over high heat so that they solidify let it cook enough so that the egg solidifies as a solid whole (omelet-style). It helps to use a large pan and lift the eggs so that any remaining liquid flows to the metal and cooks slightly before flipping the omelet. Add the cheddar immediately once flipped.

    Once the bacon is cooked, let it dry on paper towels. Once the eggs are cooked, slide the omelet onto the tortilla, and add the salsa. Crumble up the cooked bacon and distribute evenly throughout. Then, wrap the tortilla (fold in two “sides” slightly, then roll forward). At this point, the burrito might not be very warm (given the mix of cold and hot ingredients), so replace the wrapped burrito over heat (pan or griddle) for another 2 minutes or so until it reaches the desired heat.
