Chile Cheese Strata
Good for breakfast or brunch, and serves a crowd.
ingredients
- 8 eggs
- 1 1/4 cup medium cheddar cheese, shredded
- 1 1/4 cup sharp cheddar cheese, shredded
- 2 1/2 cup Monterey Jack cheese, shredded
- 2 large cans whole green chiles
- Salt and pepper
- Garlic powder

Preheat oven to 350°F. Grease 9x13 inch baking pan.

Combine cheeses in a mixing bowl. Open and remove seeds from chiles. Alternate layers of cheese and chiles in baking pan, beginning and ending with cheese.

Beat eggs in a bowl until foamy. Add salt, pepper, and garlic powder to taste. Pour eggs over cheese and chiles. Refrigerate overnight.

Bake for about 45 minutes, or until firm. Let cool slightly for easy serving.

Prepare this the night before, then pop it in the oven for a hot and filling breakfast.
