WHIPPED RICOTTA WITH HONEY AND MIXED BERRIES

A creamy treat featuring fresh summer berries.

ingredients

RICOTTA
  • 2 C whole milk ricotta cheese (Italian or fresh ricotta is less grainy than store brands)
  • 4 oz cream cheese, room temperature
  • 2 T sugar
  • 2 T honey
  • 3/4 tsp vanilla extract
BERRY MIXTURE
  • 4 C mixed fresh berries (halved strawberries, blackberries, raspberries, blueberries – your choice)
  • 2 T Sugar or sugar substitute
  • 2 tsp fresh lemon juice

    In a food processor – blend the ricotta, cream cheese, sugar, honey and vanilla until smooth.

    Transfer to a bowl and refrigerate.

    (The cheese mixture can be made a day ahead, cover and keep refrigerated. Stir before serving)

    Prepare the berries by combining them in a large bowl, add the sugar and lemon juice, toss to coat and let stand about 30 minutes.

    When ready to serve divide the ricotta mixture among 6 bowls and top with the berries.

This is pretty served in a Martini glass. Use your favorite fruits in this dish.
