Sweet Potato Casserole with Streusel Topping
I’m not a huge sweet potato fan, but I love my Aunt Beverly’s sweet potato casserole.
ingredients
- 3 1/2 lbs. medium sweet potatoes (peeled)
- 3/4 cup maple syrup
- 1/2 orange juice
- 1/4 cup butter (cut in small pieces)
- STREUSEL TOPPING:
- 1/4 cup flour
- 3 tbsp. light brown sugar
- 1/2 tsp. cinnamon
- 1/3 cup coarsely chopped pecans

Preheat oven to 325. Lightly grease 1 1/2 quart baking dish.

Boil sweet potatoes in water until tender (about 20-30 minutes). Drain & cool. Slice

Slice sweet potatoes into 1/2 inch rounds. Layer in baking dish. Mix orange juice & maple syrup. Pour mixture over sweet potatoes & dot with butter.

Cover dish with foil tightly. Bake 20-30 minutes until hot and potatoes have absorbed some of the liquid. Mix streusel topping & sprinkle over sweet potatoes. Bake uncovered for another 15 minutes.
