Spicy Turkey Sloppy Joes
A Healthy Take on an American Classic.
ingredients
- 2 lbs. ground turkey, both light and dark meat
- 2 large carrot, peeled and shredded
- 2 celery stalks, finely chopped
- 1 red bell pepper, seeded and finely chopped
- 1 jalapeƱo, seeded and minced
- 1 large yellow onion, finely chopped
- 4 garlic cloves, minced
- 2 tablespoons red wine vinegar
- 3 tablespoons worcestershire sauce
- 4 tablespoons light brown sugar, do not pack
- 1/4 teaspoon cayenne pepper
- 1 tablespoon dijon or yellow mustard
- 1 cup tomato sauce
- 4 tablespoons tomato paste
- 1 cup chicken or vegetable stock
- salt and pepper to taste

In a large skillet, brown the turkey over medium-high heat. Add all of the vegetables and cook until tender, 7-8 minutes. Add remaining ingredients and mix well. Taste to adjust seasoning. Simmer until thickened, about 10 minutes.

Cool, slightly, before serving. Serve on burger buns, kaiser rolls or in lettuce cups.
