SPAGHETTI AND ARUGULA
I love arugula and it just seems to keep growing in my garden!
ingredients
- 2 T. olive oil
- 1/4 t. crushed red pepper
- 2 garlic cloves minced
- 1 cup chopped tomato
- 1 lb. arugula trimmed and torn (about 6 cups)
- 4 cups cooked whole-wheat spaghetti
- 1 1/2 t. red wine vinegar
- 1/2 t. freshly ground pepper
- 1/2 cup Parmesan cheese

Heat 1 T. oil over medium heat in a Dutch oven. Add red pepper and garlic; saute 20 seconds.

Add tomato and arugula; saute 2 minutes.

Spoon into a large bowl.

Add 1 T. oil, vinegar and pepper to spaghetti and toss well.

Sprinkle with cheese.
