Sweet and Sour Grilled Chicken

ingredients

  • 2 garlic cloves, crushed
  • 2 tbsp. balsamic vinegar
  • juice of 1/2 lime
  • juice of 1/2 lemon
  • 1/3 cup light brown sugar
  • 2 tbsp. Dijon mustard
  • 1/3 cup honey
  • 1 tsp. salt
  • 1/2 tsp. back pepper
  • 4 tbsp. olive oil
  • 2 whole boneless, skinless chicken breasts, cut in half

    In a shallow bowl, whisk together garlic, vinegar, lime and lemon juices, brown sugar, mustard, honey, salt and pepper. Whisk in olive oil.

    Divide the sauce into thirds. Reserve one part for basting and one for dipping sauce, then add the chicken to the dish with the remaining sauce and turn to coat.

    Grill chicken for 4-5 minutes per side or until juices run clear. During last minutes of grilling, baste chicken with the portion of the reserved sauce to glaze it. Serve with reserved portion of marinade for dipping.
