Varenikas
Varenikas are from the German-Russian side of the family, and are a special treat.
ingredients
Dough- 3 1/2 cups flour
- 1/2 teaspoon salt
- 4 eggs, beaten
- 1/2 o 3/4 cup water
- 5 green apples
- 1/2 cup sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons butter
- 2 slices white bread
- 5 medium potatoes
- 1/4 cup oil
- 1/2 cup chopped onions
- 12 teaspoon pepper
- 1 1/4 teaspoon salt
- 1 cup sauerkraut, drained and firmly packed

Dough

Mix flour and salt in a large bowl. Make a well in center of flour and gradually add the eggs and water with a fork, and work together using enough water to make a stiff dough.

Work by had until the dough is smooth and elastic.

Place dough on floured board and knead until very smooth. Shape into a long roll; cut into 6 sections and knead each section into a round ball size. Set aside, covered with plastic wrap and a dish towel so dough does not dry out. Let dough rest while making filling.

Roll out dough to 9 inch round. Cut into 4 even pieces. Place 1/4-1/3 cup of filling in the middle of each piece of dough, bring up sides of dough and pinch to seal. Be careful not to get filling between seams or it will open while cooking.

Put in large kettle of boiling salted water. Boil 3 minutes. Drain. Pour melted butter over varenikas before serving.
Apple Filling

Peel apples, cut up and stew until soft. Mash, and add sugar and cinnamon. Melt butter in a small skillet. Cut bread into squares and toast in butter over medium heat.

Mix apples, toasted bread, and egg together.

Use to fill varenikas.
Potato and Sauerkraut Filling

Cook potatoes in boiling water until tender, about 15-20 minutes. Drain, and add salt and pepper.

Heat oil in medium skillet, add onions and saute. Add sauerkraut to onion, and saute until until tender but not brown. Add to mashed potatoes and mix well.

Use to fill varenikas.
