Mrs. Casement's Cheesecake
Mrs. Casement’s cheesecake is the best basic cheesecake recipe ever. This came from Terri Casement, LAFB, Maine. It is her mother-in-law’s recipe. After moving from Loring, I misplaced the recipe and included a note in a Christmas card to Terri to ask for a copy. She graciously sent another.
ingredients
Crust- 1 c flour
- 1/3 c sugar
- 1 egg
- 1/2 t vanilla
- 1/2 c butter, melted
- 32 oz cream cheese, room temperature
- 1 1/2 c sugar
- 3 eggs
- 2 t vanilla
- 3 T flour
- 1 T lemon juice (optional)
- 2 c sour cream
directions
Crust
- 1
Preheat oven to 400°.
- 2
For crust, combine flour, sugar, egg, & vanilla.

Add butter.

Press part (about 2/3) of the dough onto the bottom of a springform pan.

Bake about 15 minutes, or until golden brown. Set aside to cool.

Refrigerate remaining dough.
Filling
- 1
Preheat oven to 525°.

Using a wooden spoon, beat cream cheese until smooth.

Add sugar, vanilla, flour, & lemon juice.

Add eggs, 1 at a time.

Blend in sour cream.

Press the remaining dough around the sides of the cooled springform pan, making sure to seal the bottom.

Add the filling and bake at 525° for 10 minutes, then reduce heat to 200° and bake for 1 hour.

Turn the oven off, and leave cheesecake in the oven for another hour. DO NOT OPEN oven door.
