Bacon Tomato Cups
ingredients
- 8 slices bacon, crisply cooked
- 1 medium tomato, seeded
- 1/2 small onion
- 1/2 cup mayo
- 1 tsp basil
- 3 oz. swiss cheese
- 1 can (10 oz) refrigerated flaky biscuits

Preheat oven to 375°.

Coarsely chop bacon, tomato and onion with food chopper. Grate cheese (3/4 cup). Mix all ingredients, except for biscuits. Set aside.

Separate each biscuit into 3 thinner biscuits. Lay each one over a mini-muffin pan cup. Dip shaper in flour and press into cup.

Scoop filling into cups and bake for 10-12 minutes until golden brown.
