Oven-baked Steak Fajitas

  • 2 tbs. vegetable oil
  • 2 tsp. each: chili powder and ground cumin
  • 1 tsp. salt
  • 1 lb. flank steak, cut into thin strips (pork or chicken may be substituted)
  • 1 can diced tomatoes
  • 1 each: medium green and red bell pepper and onion, cut into thin strips
  • 10 flour tortillas, fajita size

In a 9 by 13 inch baking dish, combine oil, chili powder, cumin and salt. Add steak, tomatoes, peppers and onions; mix well. Bake uncovered in a preheated, 400 degree oven for 25 minutes. Serve wrapped in warm tortillas.
