Quick Artichoke Blue Cheese Salad Recipe
Marinated artichokes, cabbage, cucumber, capers and olives give this quick salad a nice blend of tastes and textures. The addition of blue cheese adds rich creaminess and deep flavor.
ingredients
- 3 cups napa cabbage (shredded)
- 1/4 to 1/2 cup balsamic vinaigrette dressing
- 1 1/2 cups of jarred marinated artichoke hearts (drained and roughly chopped)
- 1 cup cucumber (finely diced)
- 1/2 cup pitted black or green olives (chopped medium dice)
- 1/4 cup capers (rinsed and drained)
- 4 oz crumbled blue cheese
