California Rolls
Recipe from Shioko Futsiyama, a Japanese exchange student in Basel, Switzerland. Taught Pam how to make Sushi rolls in her dormitory kitchen.
ingredients
- 1 cup white rice
- 4 Tbsp rice vinegar
- 4 Tbsp sugar
- 1 tsp salt
- Nori (sheets of seaweed)
- cucumber (seeds scraped out, sliced lengthwise in 1/4" strips)
- avocado (sliced lengthwise in 1/4" strips)
- imitation crab (sliced in 1/4" strips)

Prepare sticky rice

Rinse rice 7-8 times.

Soak rice in 1 1/2 cups water for at least an hour.

Bring rice and water to a boil, allow to boil for 1-2 minutes in covered pan, then turn stovetop to lowest heat setting for 15 minutes. Remove from heat (leave covered entire time) and leave it to rest for 5-10 minutes more.

Mix together rice vinegar, sugar and salt. Add to rice and mix together until rice is nicely sticky.
Form rolls
Warm Nori sheet over stovetop until color changes slightly. Lay Nori on sushi rolling mat. Spread sticky rice in very thin layer on Nori, be sure to cover all edges. Lay 1 slice each of cucumber, avocado, and crab on rice, about 1/2“ in from edge. Roll tightly, remove from rolling mat, and slice into 1/2” pieces.
