Frank Limardi's Tuna Fish Sauce (as told by Jim)
This sauce was traditionally served on Christmas Eve.
ingredients
- 2 cans of plum tomatoes
- 1/4 cup olive oil, or more
- 3 to 4 cloves garlic chopped
- 1 can tuna in olive oil (can be found in Italian stores)
- 2 anchovy slices (optional)
- Fresh, chopped thyme to taste
- Salt and Pepper
- 2-3 t capers
- black olives to your quantity
- 1 t red pepper flakes
directions
Add oil to saute pan and brown garlic until golden. Add capers, olives and pepper flakes and cook for 30 seconds until flavors meld. Add tuna and break up with fork. Crush and add tomatoes, stir to mix. Add thyme and salt and pepper. Cook for 10, 15, 20 or 30 minutes. It doesn’t matter. Serve on spaghetti or a hearty pasta.
