Obscene Fudge Cake
This is the cake that Mom used to make for us for our birthday when we were kids. She got the recipe from our next door neighbor, Jennifer Wiley. It’s the BEST CAKE EVER!
ingredients
- CAKE:
- 2 cups sugar
- 1 cup vegetable oil
- 2 eggs
- 3 cups flour
- 3/4 cup cocoa
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 1/2 tsp. salt
- 1 cup brewed coffee
- 1 tsp. vanilla
- 1/2 cup chopped nuts (optional)
- 1 cup buttermilk
- FILLING:
- 1/4 cup sugar
- 1 tsp. vanilla
- 8 oz. cream cheese
- 1 egg
- 1/2 cup shredded coconut
- 6oz. mini chocolate chips

Preheat oven to 350.

Generously grease & lightly flour a 10-inch bundt pan.

Combine all ingredients for the filling & set aside.

In large bowl, combine sugar, oil, & eggs. Beat on high speed for 1 minute. Add remaining cake ingredients and beat for three minutes, scraping bowl occassionally. (I like to stir in the nuts by hand.)

Pour 1/2 batter inot the prepared bundt pan. Carefully spoon the filling mixture around the center of the cake batter. You are trying to make a tunnel of filling in the cake, so make sure that the filling doesn’t touch the sides of the pan. Carefully pour/spoon remaining cake mixture on top of the filling.

Bake at 350 for 70-75 minutes until top of the cake springs back when lightly pressed. Cool cake in the pan for 20 minutes before “unmolding” from pan. You can frost of not. (My mom just sifts powdered sugar on top!)
