Minestrone Soup
ingredients
- 3 tbs. bacon drippings
- 1 cup chopped italian sausage
- 1 large onion, sliced
- 4 carrots sliced
- 2 stalks celery chopped
- 2 large potatoes diced
- 1 can(16 oz) tomatoes with juice
- 1 cup sliced zucchini
- 1/2 small head cabbage shredded
- 1 can(15 1/2 oz) undrained red kidney beans
- 1 can garbanzo beans
- 1 1/2 quarts beef stock(about 8 cans)
- 1 tb. crushed dried basil
- 1 clove garlic minced
- 1/2 tsp salt
- 2 cups cooked elbow macaroni
- Grated Parmesan cheese(optional)

Heat bacon drippings in a large skillet.

Fry sausage and onion until tender over medium heat. Transfer to a stockpot.

Add vegetables, kidney beans and stock. Cover and simmer for 15 minutes. Add seasonings and macaroni.

Simmer, stirring occasionally until soup thickens and all ingredients are cooked.

Serve hot sprinkled with grated cheese.

This is a very versitile soup. Add or substitue with other vegetables.
