Spaghetti Carbonara
ingredients
- 1 large egg + 1 egg white
- 2/3 cup grated Parmesan
- 1/4 cup evaporated milk
- 2 Tbsp mayonnaise
- 2 oz. chopped Canadian bacon
- 2 slices chopped bacon
- 3 garlic cloves, minced
- tsp pepper
- 1/3 cup white wine
- Salt
- 1 lb. spaghetti

Boil 4 quarts water in a large pot.

Process egg, egg white, cheese, evaporated milk, 1 1/2 Tbsp mayo until smooth.

Cook bacons in large skillet over medium heat until brown. Set aside bacon in a bowl.

Add garlic and pepper to fat in the skillet. Cook 30 seconds, until fragrant. Stir in wine, simmer 1 minute. Remove pan from heat, cover.

Add 1 Tbsp salt and pasta to water, cook. Drain pasta, reserve 1 cup water, return to pot. Toss with remaining 1/2 Tbsp mayo.

Add wine mix and reserved pasta water to egg mixture. Process until smooth. Pour over hot pasta, toss to coat. Add bacons. Serve.
