Apple Walnut Vinaigrette Salad

ingredients

Salad
  • 1-2 large heads green leaf lettuce or combination of greens such as Bibb and Boston
  • 1 Granny Smith Apple peeled, cored and cubed
  • 2 ounces Monterey Jack Cheese cut in small cubes
  • 1/4 cup chopped walnuts
  • 1/4 cup white or yellow raisins
  • 1/4 cup 1/2 cup Vinaigrette Dressing
  • salt and pepper to taste
Vinaigrette Dressing
  • 1/2 cup olive oil
  • 1 T lemon juice
  • 2 T vinegar
  • 1 T Dijon mustard
  • 1 clove garlic, minced
  • 1/2 t each of basil, tarragon and oregano

directions

    Tear lettuce into bite-size pieces.

  • 2

    In a large salad bowl toss the lettuce, apples, cheese, walnuts and raisins.

  • 3

    In a small bowl whisk together the vinaigrette ingredients.

  • 4

    Pour dressing over salad and gently toss. Add salt and pepper to taste.
