This is wonderful to serve when you have out of town guests. It’s quick, easy and a real crowd pleaser.

ingredients

  • 2 packages cheese blintzes (defrosted)
  • 1 stick butter melted
  • 6 eggs, well beaten
  • 1 pint sour cream
  • 8 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 6 tbsp orange juice

directions

Melt butter in 2 quart casserole and place blintzes in 1 layer on bottom, turning each blintz to coat with butter. Blend other ingredients in blender and pour over blintzes. Bake about 45 minutes at 350 degrees or until top begins to brown.

Good with a dollop of sour cream and topped with sliced fresh strawberries
