Great-grandma Laura's Chocolate FrostingBarbara Cumbo Cumbo
My husband’s grandmother, Laura Golden, made a version of this frosting for my husband and he loved it. This was Papa Dick’s favorite! He loved having a yellow, butter cake made in a jelly roll pan so that it was very thin and then having the frosting slathered over the top. Papa considered the butter cake to be the perfect ’vehicle’ for transporting the delicious, rich dark chocolate frosting. I got the recipe and made this for him for years. Using the microwave makes it a snap.
- 1 14 oz can of sweetened condensed milk
- 2 oz semi sweet chocolate squares
- dash salt
- 1 tsp instant coffee
- 3 tbsp butter
- 1 tsp vanilla extract
1. Disolve instant coffee in 1 tablespoon of water. In microwave-safe bowl combine sweetened condensed milk, chocolate, coffee, and salt. In microwave, cook 3 minutes, remove from oven and stir. Put back in M/W for another 3 minutes. Remove and stir in butter and vanilla, beating until mixture thickens.
2. Spread on cooled yellow butter cake. Will frost 1 (8 or 9 inch) 2 layer or 1 (13 x 9 inch) cake or 2 dozen cupcakes.
