Pasta with tomato and basiljoan ganz
fresh tomatos and basil sauce

- 1 cup tomatoes, peeled, seeded and chopped
- 1/4 cup chopped fresh basil
- 1/2 cup extra virgin olive oil
- 2 large shallots,(or garlic) chopped
- salt and pepper to taste
combine all ingredients. Toss with fresh cooked pasta.
for fresh pasta combine, 2 cups of all purpose unbleached flour (i use 75 % unbleached and 25% semolina) 2 large eggs at room temp. and 1-2 teaspoon of water and pinch of salt.
Mound flour and salt on a pastry board . Make a well in the middle of the flour and crack eggs into the well. Add the water. Using a fork, gently beat the egss and begin to incorporate the flour using a circular motion. When all the flour has been moistened, gather dough into a ball. Knead for about 10 minutes. til smooth and elastic. wrap dogh in plastic and let rest about 45 minutes. Can add rosemary or other herbs.
