Ron's Fried Rice

Serves 4 as main dish or 6-8 as a side

The below recipe is one possible combination. Cooked white rice should be from the day before or cooked at least 4 to 6 hours before making your Fried Rice and allowed to dry out in refrigerator. Rice needs to have had time to dry out and not be sticky for it to fry correctly. Ron has refined this recipe over many years starting with his two years in Southeast Asia in the 1960’s.

ingredients

  • 4 well beaten eggs
  • 1 Tablespoon vegetable oil
  • 3 Cups of cooked white rice.
  • 2 Cups of diced cooked meat (chicken, pork, beef, shrimp or combination)
  • 2 Cups of vegetables (dice red peppers, peas, chopped green onions, mushrooms, sliced carrots, etc.) If you want vegetarian, double the vegetables and omit the meat.
  • 1/4 cup of fresh chopped cilantro leaves
  • 1/4 cup of fresh basil leaves or 1 Tablespoon of dried basil
  • 1 Tablespoon vegetable oil
  • SAUCE
  • 3 Tablespoons soy sauce
  • 2 Tablespoons white wine or cooking sherry
  • 2 Tablespoons rice vinegar or white vinegar
  • 2 large cloves of garlic crushed in garlic press
  • 1 small knob of fresh ginger, pealed and crushed in garlic press
  • Juice from 1/2 fresh lime
  • Hot sauce to taste or finely diced Thai hot chili peppers to taste (Be careful)
  • 1 Lime, cut into 8 sections for squeezing over your fried rice. (This is Thai influence.)

    In a hot wok fry 1/2 the beaten eggs in 1/2 Tablespoon of oil. Continually swirl the eggs so that you end up with a thin “round” of fried scrambled eggs. Turn the eggs out on a cutting board or counter. Do the same with the remaining eggs. Allow to cool and than cut into 1/2 inch squares and set aside. Wipe out the wok to assure that egg is removed.

    In hot wok stir fry the vegetables in oil until just tender. Add the meat and continue to stir fry until the meat is heated through. Add the rice and eggs and mix and fold until the entire mixture is well combined. Form a small “bowl” in the rice so that you can see the bottom of the wok, add the sauce and continue to mix and fry until heated totally. Just before serving, mix in the cilantro and basil.

It is important to know that fried rice is a staple of all Asian cultures and is prepared differently in each culture. It is basically a meal that is made up of leftovers. Therefore the ingredients can and should be different every time you make it.
