Quick Chicken Enchiladas
ingredients
- 1 package Tyson Fajita Chicken Strips
- 1 small tomato diced
- 1 can Rotell tomatoes
- 1 can fat free refried beans
- 2 cans enchilada sauce
- 6 (10-inch) flour tortillas
- 1 can sliced black olives
- 1/3 cup jalapeño peppers diced.
- 1 1/2 cups Mexican-blend cheese
- aluminum foil

Preheat oven to 350°F. Coat 9inch baking dish with cooking spray. Chop tomato finely in small bowl

Chop chicken coarsely; . Stir in beans and 1 can of the enchilada sauce.

Spoon chicken mixture equally into center of tortillas. Roll tortillas around filling and place, seam side down, in baking dish.

In a bowl mix tomatoes, olives, jalapeno, rotell tomatoes and the other can of enchilada sauce. Pour over enchiladas. Sprinkle with cheese. Cover with aluminum foil and bake at 350 for 15 minutes or until heated
notes
If you like cilantro you can add it.
