The Shrimp Couscous

ingredients

  • 2 tsp. olive oil
  • 1 onion, chopped
  • 1 med. zucchin, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of thyme leaves
  • 1 1/2 cups of chicken broth or vegetable broth
  • 1 tomato peeled, (we use no salt added diced tomatoes instead), 1 pound of shrimp, peeled and deveined
  • 1 cup of couscous

directions

Heat a nonstick fry pan with the oil and add onion and zucchini, cooked till golden then stir in the garlic and add the thyme, red pepper and broth; bring this to a boil. Stir in the tomatoes and shrimp and return to a boil, then add the couscous stirring it in. Remove from heat, cover and let stand until the shrimp turns pink if using fresh and the liquid is absorbed, about 5 minutes. Stir and serve.
