ingredients

  • 22-24 french rolls, cut off top & hollow center
  • 1 pt crushed olives
  • 1 lb cheddar cheese
  • 4-5 hard boiled eggs, grated
  • 1 bell pepper, finely diced
  • 4 scallions, finely diced
  • 1 10oz can enchilada sauce

directions

Mix all ingredients besides rolls. Stuff rolls and wrap in wax paper. Warm in slow oven (250-300) for 1 hour or check to see if cheese is melted sooner.
