Greek Tomato and cucumber salad
This simple salad is the perfect addition to your quick-and-easy repitoire. It’s good all year round and an addition in any spread that’s both cool and savory.
ingredients
- 2 large ripe beef steak tomatoes
- 1 large english cucumber
- 1 small red onion, diced
- 1/4 cup red wine vinegar
- 1/4 cup olive oil, plus 2 tbsp
- 2 cloves of minced garlic
- salt and pepper to taste
directions
Dice the onion small and the tomatoes and cucumbers medium sized. Combine in a large salad bowl with salt and pepper. Whisk together the olive oil, vinegar, garlic, and pepper until the mixture resembles vinigrette, then stir into your salad, gently. Serve immediately or chill before hand.

This recipe is so easy to make for a crowd. Make it authentic by adding kalamatta olives and feta cheese!
