Vegetarian Pad Thai Noodles

ingredients

  • 1/2 lb brown rice noodles
  • 1/2 cup ketchup
  • 3 tbsp. gluten free soy sauce or fish sauce
  • 3 tbsp. lime juice
  • 3 rice vinegar
  • 3 tbsp. brown sugar
  • 1/2 tsp. hot chili paste
  • 1 tbsp. vegetable oil
  • 3 cloves garlic
  • 1 small onion sliced
  • 2 eggs beaten
  • 1 cup bean sprouts
  • 3 tbsp. chopped peanuts(roasted)
  • 3 green onions
  • 1/3 cup fresh cilantro or Italian parsley

    Cook noodles or if using vermicelli soak in hot water

    Drain

    Combine next 7 ingredients

    Heat oil in large fry pan

  • 5

    Add garlic and onion

  • 6

    Add sauce and boil.

    Add eggs and saute

    Add noodles and heat.

    Add bean sprouts, peanuts, green onions and parsley

Can be made ahead. Nice light dinner.
