Vegetarian Pad Thai Noodles
ingredients
- 1/2 lb brown rice noodles
- 1/2 cup ketchup
- 3 tbsp. gluten free soy sauce or fish sauce
- 3 tbsp. lime juice
- 3 rice vinegar
- 3 tbsp. brown sugar
- 1/2 tsp. hot chili paste
- 1 tbsp. vegetable oil
- 3 cloves garlic
- 1 small onion sliced
- 2 eggs beaten
- 1 cup bean sprouts
- 3 tbsp. chopped peanuts(roasted)
- 3 green onions
- 1/3 cup fresh cilantro or Italian parsley

Cook noodles or if using vermicelli soak in hot water

Combine next 7 ingredients

Heat oil in large fry pan

Add garlic and onion
- 6
Add sauce and boil.

Add eggs and saute

Add noodles and heat.

Add bean sprouts, peanuts, green onions and parsley
