Chicken and Sausage
This is one of many “one pot” dinner recipes from Margee’s collection!
ingredients
- 1 lb Sweet Italian Sausage
- 1 lb Boneless Chicken Tenders
- 1 lb Sliced Mushrooms
- 2 Cans Peeled Italian Style Tomatoes
- Juice of 1 Lemon
- 2 Cloves Crushed Garlic
- 2 T EVOO
- 1/2 Stick of Butter
- 2 C Red Wine

Cut Tomatoes into quarters and place in oven safe pot with lid. Cut Sausage into disks and saute in large pan. While sausage is cooking, marinate chicken in lemon juice, garlic and olive oil. When sausage is brown and crispy, add to pot with tomatoes.

Cook chicken in same pan as sausage. Brown chicken , cook until golden brown and fully cooked. Add chicken to large pot. Saute mushrooms in butter and add to pot. Pour in wine and cook for two hours on low heat.

Serve with Orzo or Rice.
