Avacado Corn Salsa

ingredients

  • 1 (16 oz) package of frozen corn
  • 2 cans (2 1/4 ounces each can) sliced black olives
  • 1 medium sweet red pepper, chopped
  • 1 bunch green onions, chopped
  • 5 cloves garlic, minced
  • 1/3 C olive or vegetable oil
  • 1/4 C lemon juice
  • 3 T white wine vinegar
  • 1 T dried oregano
  • 1/2 t salt
  • 1/2 t pepper
  • 4 medium ripe avocados

directions

Combine corn, olives, red pepper and onions. Mix garlic, oil, lemon juice, vinegar, oregano, salt, and pepper and mix well. Pour over corn mixture. Just before serving peel and chop avocados. Serve with tortilla chips.
